Minoyo Co., Ltd. will exhibit at "FOODEX JAPAN 2026," one of Asia's largest food and beverage trade shows, held at Tokyo Big Sight from Tuesday, March 10 to Friday, March 13, 2026. Our booth is located in East Hall 6, booth number E6-K57.
At our booth, we will present our caffeine-free beverages "Soybean Coffee" and "Black Soybean Coffee," made by roasting and processing domestic soybeans, along with our new plant-based "Soybean Dashi Tsuyu," inspired by the wisdom of shojin (Buddhist vegetarian) cuisine. Visitors can experience the soybean umami drawn out with no additives whatsoever through tastings at the venue.
"Soybean Coffee" and "Black Soybean Coffee" are caffeine-free beverages made solely from domestic soybeans. Against the backdrop of changing growing conditions and soaring prices of coffee beans due to climate change, we propose them as a new alternative born from domestic ingredients.
"Soybean Dashi Tsuyu" is a product born against the backdrop of marine resource challenges such as poor kombu harvests and declining yields. Rather than a substitute for kombu, we discovered the potential of soybeans as a new form of umami, applying the shojin cuisine philosophy of drawing out umami from plant-based ingredients alone to modern cuisine.
Minoyo・Soybean Roasterycreates its products with the aim of building a cycle that starts from eating well, considers the environment, protects agricultural resources, and passes Japan's food culture, including wagashi (traditional Japanese confectionery), on to the next generation. At the venue, we have prepared a corner where you can actually try our products, so please come and experience the new possibilities of soybeans.
