Our Business

Service

01

Wholesale of Wagashi Raw Materials

Since our founding, we have supplied wagashi shops nationwide with carefully selected raw materials such as adzuki beans, mochi rice, agar, and chestnuts. To protect quality and flavor, we practice thorough control from raw material selection through storage. We have earned trust as the “artisan’s kitchen” that supports traditional flavors.

02

Manufacturing of Kinako / Soybean Products

At our own factory in Fushimi, Kyoto, we carry out integrated production using domestic soybeans, from roasting and milling to packaging. With our proprietary hot-air roasting technology, we draw out the aroma and nutrition to develop a diverse range of products such as kinako (roasted soybean flour) and soybean coffee. It is a sustainable production system that also considers the environment.

03

Development of Original Products

Drawing on the knowledge of Japanese ingredients and processing techniques cultivated over many years, we propose new food culture. We develop products that fit modern lifestyles, such as soybean dashi and plant-based items. While valuing tradition, we create flavors that connect to the future.

Kojima Western Confectionery Shop
Product Planning for Vegans

Soybeans may look the same, but their condition differs from day to day. Humidity, temperature, how the heat penetrates, how the aroma rises—even a slight difference in any of these changes the flavor. Sensing the parts that machines cannot measure, we search for the optimal roast for that day.

Development of a Caffeine-Free Menu

When I stand in the field, I can somehow tell how the year is going from the smell of the soil. Changes in weather and temperature make the beans grow differently, and even the same field wears a different face each year.
