Chuara Domyoji 〈3-Cut〉 20kg is a domyoji-ko made by steaming and drying glutinous rice, then cracking it somewhat coarsely. The 3-cut has a distinct grainy texture, and is characterized by the presence of the rice grains readily remaining even after steaming and rehydration. It absorbs water well, finishes plumply after heating, and achieves a stable texture without becoming sticky. Its natural color brings out the color of the an and leaves. Allowing texture expression that leverages the grainy feel, it is a domyoji-ko well suited to wagashi making that emphasizes appearance and satisfying bite.
